Oh my! This week was a hard lesson earned. I am the caregiver for my husband who has been diagnosed with Alzheimers. He got in his car and got lost, 70 miles from home! Had to involve the police to locate him. However, thanks to a good citizen, we were able to get him home a lot sooner had it not been for him. I couldn’t thank him enough.
Now on to better, happier things. Cake. I figured we deserved a little treat. So, I made a Pineapple Nut cake from scratch. As promised, here is a delicious recipe and very easy too.
Pineapple Nut Cake
- 2 eggs
- 1 cup chopped nuts
- 1-1/2 cups sugar
- 2 cups flour
- 2 teaspoons baking soda
- 1 20-oz. can crushed pineapple with juice
Mix in a large bowl by hand. Place in a greased and floured 9 x13 pan. Bake at 350 degrees F for 35 minutes.
- 1 stick butter (not lite)
- 1-1/3 cups confectioner’s sugar
- 1 8-oz. package cream cheese (not lite)
- 1 teaspoon vanilla
Beat well with mixer. Spread on cake and sprinkle with chopped nuts (if desired).
